Our family has many things that could hold us back from eating well but we march on! The husband has gluten (celiac), eggs and chicken inflame his body.
Our son has mild cow protein, dog and grass allergies that add to the response of his skin with chronic eczema that turns very bad if his diet and skin are not managed. His emotions play a part in his skin as well.
I was never allergic to anything that I can remember. When I turned 35 that changed like a light switch. My schedule then had to fit all this extra care for myself to relieve these symptoms. What I realized was that my son and husband have been having to live like this basically their whole lives. This was a turning point for me. How we were living was causing some of these symptoms and in the knowing needed to do something about it.
My husband and I had jobs that worked really well because our busy seasons were opposite of each other. In the winter when I was working 10, 12, 14 hour days he was slow and was home more and did more house and son tasks. In the spring we would switch and he would get busy like I do and then it was my turn doing more house and son things. I couldn’t see how we were going to have enough time in the day to cook from ingredients and mini homestead to be healthier all the while working full time, being a mom, a wife and still find a little time for myself.
